Would you like an easy, fun and healthy meal recipe that you can take on a picnic, or serve friends or family for lunch, that looks and tastes like it came from a French café?

Here is a family recipe from the Alsace-Lorraine region in North Eastern France (where Quiche Lorraine originated) that can be adjusted to suit the palate of your family.

Ingredients

  • 3 eggs
  • 200 ml tub of crème fraîche
  • 1 sheet of puff pastry
  • 1 cup of grated cheese (Emmental, Edam or Gouda)
  • I cup of filling ingredients (eg.bacon/tomato, spinach/salmon, zucchini/capsicum, pumpkin/silverbeet)

Method

Turn oven to 220°C or 200°C fan forced.

Place puff pastry over a well greased dish to thaw (can defrost in microwave) and stretch/fold pastry to cover base and sides of the dish.

Bake or fry filling ingredients if needed (garlic, onion, bacon, raw salmon, zucchini, pumpkin). You may have some roast veggie leftovers?

Whisk the eggs and crème fraîche together until texture similar to pancake batter.

Sprinkle the grated cheese over the base, add filling ingredients over the cheese and finally pour over the egg mixture.

Cook in oven for 25 minutes or until top starts to set and become golden brown. The top may rise like a balloon but will settle when cooled.

Allow to rest and continue to set for 5-10 minutes out of the oven before slicing and serving with a side salad.
